Because I just know I'm going to lose this one. Again. For those of you that don't get Taste-Of-Home or Quick-Cooking, you are SO missing out! Chicken Corn Chowder With Cheese ...

DEFINITELY DOUBLE THIS, MAYBE EVEN TRIPLE IT!


1/3 cup chopped celery
1/3 cup chopped sweet red pepper
2 T butter
1 and 1/2 T all-purpose flour
2 cups milk
1 can (14 ounces) creamed corn (I like my own, or frozen)
1 and 1/3 cup French's Fried Onions, divided
1 cup diced cooked chicken
2 T chopped green chilies
1/2 cup shredded cheddar cheese

(Hot pepper sause optional) (Cheese toast optional) (Milk for drinking, or sweet tea)

Cook celery and pepper in butter 3 minutes.
Blend in flour, cook 1 minute
Gradually stir in milk and corn
Bring to boil
REduce heat, simmer 4 minutes
Add 2/3 cup onions, chicken and chilies
Cook until heated through
Top with cheese and remaining onions

Sometimes I stir in a handful of shedded cheese. Because I can :)
